Ingredients

Zucchini Garlic Bites

  • 1 cup shredded zucchini, drained well
  • 1 clove garlic, grated fine
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large egg
  • 2 tablespoons chopped fresh chives (or 1 tablespoon dried chives)
  • 1 tablespoon chopped fresh parsley (or 1/2 tablespoon dried)
  • 1 teaspoon chopped fresh basil (or 1/2 teaspoon dried)
  • 1 teaspoon chopped fresh oregano (or 1/2 teaspoon dried)
  • Pinch of salt and pepper

For Dipping

  • Marinara sauce

Instructions

  1. Preheat Oven: Preheat your oven to 400˚F (200˚C). Lightly coat a baking sheet with olive oil or non-stick spray and set it aside.
  2. Prepare Zucchini: Using a box grater, grate the zucchini into a clean kitchen towel. Roll up the towel and twist it firmly to wring out as much moisture as possible from the zucchini. This step is important to avoid soggy bites.
  3. Grate Garlic: Grate the garlic clove finely using the small holes on the box grater for maximum flavor distribution.
  4. Mix Ingredients: In a medium mixing bowl, combine the drained shredded zucchini, grated garlic, egg, breadcrumbs, grated Parmesan cheese, chopped chives, parsley, basil, oregano, salt, and pepper. Stir well until all ingredients are thoroughly incorporated.
  5. Shape Bites: Take about one tablespoon of the mixture and shape it into small balls using your hands. Place each shaped bite on the prepared baking sheet, spacing them evenly.
  6. Bake: Bake in the preheated oven for 15-18 minutes or until the zucchini bites turn golden brown and crispy on the outside.
  7. Serve: Remove from oven and serve the zucchini garlic bites warm with marinara sauce for dipping.
  8. Optional Freezing: To freeze, let the bites cool completely, then arrange them in a single layer on a baking sheet and freeze for one hour. Transfer frozen bites to a freezer bag and store for up to 4 months. Reheat by baking frozen bites at 400˚F for 10-15 minutes until heated through and crispy.

Notes

  • How to Freeze: Follow the recipe and let zucchini bites cool completely. Flash freeze in a single layer for one hour, then store in a freezer-safe bag for up to 4 months.
  • Reheating: To reheat frozen zucchini bites, bake at 400˚F for 10 to 15 minutes until crispy and heated through.
  • Drain Zucchini Well: Properly draining the shredded zucchini is crucial to prevent sogginess and ensure crispy bites.
  • Herb Variations: Fresh herbs are recommended for best flavor, but dried can be used in half the quantity.
