This Zucchini Mushroom Pasta is a quick and flavorful vegetarian dish featuring tender tagliatelle tossed with sautéed zucchini, baby bella mushrooms, and a fragrant pesto sauce. Enhanced with garlic, onions, red pepper flakes, and fresh parsley, it makes a perfect light yet satisfying meal that can be garnished with Parmesan cheese for an optional savory touch.

Ingredients

Pasta

  • 7 oz. Tagliatelle Pasta
  • 1 tbsp. Salt (for pasta water)

Vegetables & Aromatics

  • 2 medium Zucchini, sliced
  • 1 cup Baby Bella Mushrooms, sliced
  • 1/2 Onion, sliced
  • 2 Garlic Cloves, minced
  • 1/4 cup Parsley, chopped

Sauce & Seasoning

  • 4 tbsp. Pesto
  • 1 tbsp. Olive Oil
  • 1 tsp. Red Pepper Flakes
  • 1 tsp. Black Pepper
  • Pinch of Salt

Garnish

  • Parmesan Cheese (optional)

Instructions

  1. Boil Pasta: In a medium-sized pot, bring water to a boil over high heat. Add 1 tablespoon of salt to the water, then add the tagliatelle pasta. Cook the pasta according to package directions until al dente.
  2. Sauté Vegetables: When the pasta is half-cooked, heat a skillet over medium heat and add 1 tablespoon of olive oil. Add minced garlic, sliced onions, mushrooms, and zucchini. Stir occasionally and sauté for about 3 minutes until vegetables are tender.
  3. Add Seasonings and Pesto: Sprinkle in 1 teaspoon of red pepper flakes, 1 teaspoon of black pepper, and a pinch of salt. Add 4 tablespoons of pesto and the chopped parsley to the skillet. Stir well to combine all ingredients.
  4. Combine Pasta and Sauce: Use tongs to pull the cooked pasta directly from the boiling water into the skillet with the vegetables and pesto sauce. Toss everything together to mix evenly and coat the pasta.
  5. Serve: Plate the pasta and garnish with grated Parmesan cheese if desired. Serve immediately while hot.

Notes

  • If the pasta seems dry, add a few tablespoons of the reserved pasta water or vegetable broth to loosen the sauce and stir.
  • Spaghetti or linguine pasta can be used as alternatives to tagliatelle without affecting the taste.
