Delicious and healthy Feta and Spinach Chicken Patties, perfect as a low-carb, gluten-free meal packed with protein and Mediterranean flavors. These patties are easy to make, pan-fried until golden, and can be served in a variety of ways for a nutritious lunch or dinner.

Ingredients

Chicken Patty Mixture

  • 2 lbs ground chicken
  • 1 large egg, beaten
  • 1/3 cup almond flour
  • 1 tsp garlic powder
  • 1 cup spinach, coarsely chopped
  • 1/3 cup feta cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper

For Frying

  • 2 tbsp olive oil

Instructions

  1. Mix Ingredients: In a large mixing bowl, combine ground chicken, almond flour, beaten egg, crumbled feta cheese, chopped spinach, salt, pepper, and garlic powder. Mix thoroughly to ensure all ingredients are well incorporated.
  2. Form Patties: Roll the chicken mixture into 8 large or 12 small balls. Place them on a plate or on parchment paper to prepare for cooking.
  3. Preheat Skillet: Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. You may need to cook the patties in two batches, using 1 tablespoon of olive oil for each batch.
  4. Cook Patties: Place the patties in the skillet and use a spatula to gently press each ball into a flat disc shape. Cook for 4-5 minutes on each side, ensuring the patties get a golden crust.
  5. Check Doneness: Use a meat thermometer to check the internal temperature; the patties should reach 165°F (74°C) to be fully cooked and safe to eat.
  6. Serve: Remove the patties from the skillet and serve them over a bed of lettuce, on a bun as a chicken burger, or with your favorite side of vegetables for a balanced meal.

Notes

  • If the chicken mixture feels too wet and difficult to form into patties, add an extra tablespoon of almond flour to help bind the mixture.
  • Store cooked patties in a glass container in the refrigerator for up to one week or freeze for up to three months for meal prep convenience.
