These Gluten Free & Vegan Baked Apple Pie Rice Paper Rolls are a delightful and healthy twist on traditional apple pie. Using rice paper instead of pastry, these rolls are filled with cinnamon-spiced apples and baked until crispy and golden. Perfect as a light dessert or snack, they combine the sweet and comforting flavors of apple pie with a crunchy, gluten-free exterior.

Ingredients

Fruit Filling

  • 4-6 Apples, peeled and sliced
  • 1/3 Cup Brown Sugar
  • 1 Tsp Cinnamon

Rice Paper Rolls

  • Part of a Package of Rice Paper (around 10-12 sheets)
  • 2 Tbsp Cooking Oil, for brushing

Instructions

  1. Preheat Oven: Preheat your oven to 450°F (230°C) to ensure it’s hot enough for baking the rice paper rolls crispy.
  2. Prepare Apple Filling: Peel and slice the apples, then mix them thoroughly in a bowl with the brown sugar and cinnamon until evenly combined.
  3. Soften Rice Paper: Fill a large mixing bowl about 1/4 full with water. Dip one rice paper sheet at a time into the water and soak just until it becomes soft enough to work with—do not oversoak to avoid sogginess.
  4. Assemble Rolls: Lay the softened rice paper flat on a clean surface. Spoon 1 to 2 tablespoons of the apple mixture onto the center. Fold the bottom edge up first, then fold the sides over the filling, and finally fold the top edge down to seal the roll neatly.
  5. Repeat: Continue assembling rolls with the remaining rice paper sheets and apple filling until all is used up.
  6. Prepare for Baking: Arrange the rice paper rolls on a baking sheet lined with parchment paper or lightly oiled. Brush both sides of each roll with cooking oil to promote browning and prevent sticking.
  7. Bake: Place the baking sheet in the preheated oven and bake for 25 to 30 minutes. Turn the rolls a few times throughout the baking process to ensure even crisping and golden color on all sides.

Notes

  • Be careful not to soak the rice paper too long. It should remain slightly stiff to prevent tearing and sogginess.
  • If preferred, use a wet paper towel to gently soften the rice papers instead of soaking in water.
  • Handle rice papers gently to avoid holes; any tears will cause apple mixture to leak and burn on the pan.
  • You can adjust the amount of brown sugar and cinnamon according to taste.
  • Serve warm for crisp texture and best flavor.
